Sweet pumpkin pie with orange pumpkin

Large orange pumpkins are particularly loved at Evros… Among other sweets we make a sweet pie using this particular kind of squash, which I have been eating ever since I was a child and I just love it!!! It is a vegan , suitable for Lent, pure and healthy dessert. And of course, extremely easy!

What we need:

  • 2.20 lbs orange pumpkin
  • 2 cups sugar
  • 1 cup oil, we use olive oil
  • 1 tsp cinnamon powder
  • 1 tsp salt 
  • 1 packet thick filo sheets for pies (you might need a couple of extra filo sheets so it’s better to have two packets available). We roll out our own filo sheet and usually we use 10 sheets.
  • 1 kg orange pumpkin
  • 2 cups sugar
  • 1 cup oil, we use olive oil
  • 1 tsp cinnamon powder
  • 1 tsp salt 
  • 1 packet thick filo sheets for pies (you might need a couple of extra filo sheets so it’s better to have two packets available). We roll out our own filo sheet and usually we use 10 sheets.

Makes: 1 large baking tray

How to do it:

  1. Grate the pumpkin.
  2. Mix it with the salt and set it aside for about 15 minutes.
  3. Then strain it immediately from its liquids.
  4. Add the sugar and the cinnamon and mix well so that they are evenly distributed.
  5. Brush your baking tray with oil and spread the first filo sheet, brush it with oil and then spread the pumpkin by hand evening it out.
  6. Follow the same process for each filo sheet and brush the last one on top with oil, sprinkling a little water with your fingers. Place it in a preheated oven at 180°C without the fan for about 45 minutes. Make sure that you check when the pie is golden brown eyeballing it because each oven is different. 
  7. When it is ready let it cool and then enjoy it!
